The opening of a stylish new bistro in Weston-super-Mare looks set to continue the revival of one of the South West's best-known seafronts.
The Cove, which opened its doors to diners Spring Bank holiday, has been transformed from the previously named Rozel Café into one of the premier places to eat in Weston. Behind the transformation was leading independent property consultancy, Knight Frank, and award-winning CODA Architects.
Mark Matthews, a partner at Knight Frank's Bristol office, provided initial project management advice after linking the client with CODA Architects, and pulled together an impressive design team to help with the development, including FHP Engineering Services Solutions and structural engineers George Harwood Ltd. Knight Frank maintained a watching Project Management and Development Monitoring brief throughout, liaising with North Somerset Council who is both the client's Landlord and Local Authority with regard to Planning and Building Control.
The Cove offers diners spectacular views out across the Marine Lake to Knightstone Island with the Welsh and North Somerset coasts on the horizon. The design of the bistro features full height glazed doors that fold back to reveal the impressive views.
Mark said: "Weston is heading into a very exciting stage at the moment, which is evident from developments like The Cove, refurbishment/conversion and new build to Knightstone Island and North Somerset's commitment to the renewal of Marine Lake causeway and surrounding areas.
"The Cove will undoubtedly help contribute towards the success story of Weston seafront's revival. We predict the bistro will be particularly popular amongst residents of the nearby Rozel Apartments, one of the first redevelopments in the area to be completed."
Heath Hardy, owner of The Cove, said: "The building faces south west and captures stunning sunsets. In fact, we carefully selected interior colours, such as dusky reds, deep blues and purples, to reflect the colours of the sunset.
"I'm very proud of the growing reputation The Cove has already gained in and around Weston. After a year's work of refurbishment, the bistro is quickly becoming a popular eating place with both locals and visitors to the town."
